    A blend of baking spices that may include allspice, cinnamon, ginger, mace, nutmeg and other spices. Make your own if a blend is unavailable. Add spices to your liking to suit the recipe you are using.
    Spice Cakes and cookies;
    2 tsp cinnamon
    1 tsp allspice
    1 tsp nutmeg
    1 tsp ground cloves
    Possibly some anise or anise seed

    Puddings and desserts;
    1/2 tsp each, cinnamon, cloves and nutmeg.
    Possibly, ginger
