Orange Juice

Take the peel from six oranges and carefully cut away all the white pith. Cut the peel into fine strips and place these in a crock. Pour over them three pints of boiling water, place lid on the crock and leave it for 48 hours. Now strain the juice away from the peel and add to it 4 pounds of sugar and just over an ounce of citric acid. Stir the sugar round until it is dissolved, but do not boil the juice. When all the sugar has dissolved and the juice is quite clear pout it into bottles and seal down.
