1 gallon apples, washed and pricked
5 C sugar
4 C dark vinegar
3 C water
2 sticks cinnamon
1 T whole allspice
1 T whole cloves

In large kettle mix sugar, vinegar and water. Tie spices in gauze bag and add to sirup. bring to a boil and cook until sugar dissolves. Remove from heat and cool. When cooled add the whole crab apples to the sirup and return to heat. Simmer until tender, but not mushy. Remove from heat and let stand 12-18 hours. Remove apples from sirup and pack into hot jars. Pour hot sirup over. Seal with hot lids.
