yellow tomatoes are lower in acid making them a good candidate for "figs".


List of Ingredients




5 pounds yellow pear tomatoes, or other small tomatoes
2 pounds brown sugar

Recipe



Remove skins from tomatoes. Sprinkle some of the brown sugar in a large heavy saucepan. Place a laer of tomatoes on top.Continue until all is used up. Heat slowly, until sugar melts and has a clear appearance. Let dry, basting with the syrup left from cooking.
