Recipe Introduction
Also known as fricasseed tomatoes.
Cut large unpeeled tomatoes in half, leaving small ones whole. Fry them in 1 1/2 teaspoons butter, cover with a lid, salt, pepper and flour them. Cook 10 minutes, stirring once. Pour in 2 1/2 ounces of heavy cream just as they are done. Let them boil up. Dish while hot on toast.
