Recipe Introduction
�lplermagronen is a very typical Swiss �Pasta-Dish" with lots of cheese and
List of Ingredients
9 oz straight hollow noodles (makkaronis) or H�rnli (or Italian Macaroni, break them into pieces of 3 � 4 cm)
9 oz potatoes
2 large onions (unless you are using french fried onions)
3 tablespoons butter
3/4 cup cream
7 oz grated cheese (i.e. Sbrinz, Gruyere, Bergk�se = a older, stronger hard cheese)
a touch of nutmeg and salt and pepperRecipe
Peel the potatoes and cut them into big pieces.
Cook the potatoes "al-dente".
Cook the Makkaronis al-dente.
In the meantime, melt the butter and saute the onions, until gold-brown.
Boil up the cream, add the nutmeg and some pepper. Towards the end, add 1/4 of the cheese.
In a casserole, mix the potatoes with the Macaroni, 1/2 of the cheese and half of the browned onions. (optional)
Pour over the cream and cheese mix.
Stir well.
Top it with the remaining 1/4 of cheese.
Put it in the oven for about 10 - 15 minutes (at 200�) until the cheese is melted.
Serve with "Apfelmus" (applesauce) and enjoy.
French Fried Onions
Oil for deep frying
Flour - seasoned with salt and pepper
Milk
Small onions, very finely sliced
Soak onion rings in the milk for about 5 minutes. Drain the onions and toss in the flour to coat. Fry the onions in the oil in batches. Drain on paper towels. Store in air tight container.
Applesauce
8 to 12 apples, not peeled, cored and cut into 1-inch chunks
1 cup of water or apple juice, more as needed
Pinch of salt
Optional: 1/4 cup sugar, more to taste, cinnamon.
Place all ingredients in a large pot. Cover and cook over medium low until apples begin to break down. Cooking time depends on type of apple. start checking after 15 minutes.
