    List of Ingredients




    4 razor clams
    1 egg
    1/4 C Parmesan cheese
    1/2 C ricotta cheese
    pinch nutmeg

    Recipe



    Grind the ingredients in a food processor until clams are coarsely ground.

    Make a dough for the ravioli.
    3 1/2 C sifted flour
    4 eggs
    4-5 T water
    1 T salt
    Dump the flour on a cutting board. Make a well in it. Drop the eggs and water into the well and mix with the finger tips. Begin kneading and mixing in center of the well. Keep mixing and kneading to a smooth dough. This gets really messy, but at the end it all knead in. Let rest for 10-15 minutes.
    Roll out half the dough (or as much as needed), very thin, place a teaspoon of the clam ping at equal distances. Use more ping if making larger turnover style ravioli. Place a sheet of rolled out dough on top and cut squares, crimping edges, (there is a tool for this).
    Cook in boiling water until al dente.
