    List of Ingredients




    1 1/2 C couscous
    2 T olive oil
    3/4 C chopped onion or scallion
    3/4 C finely chopped mushrooms (Champignon, porcini, ****ake)
    1 garlic clove, chopped
    1/2 tsp salt
    1/2 tsp pepper
    2 C stock, (if reconstituting mushrooms, use reserved liquid)
    1 T minced fresh basil

    Recipe



    Heat olive oil in a saucepan over medium to medium-high heat. Add the onions or shallots, mushrooms and garlic and saute for about 2 minutes. Add the couscous and cook, stirring often until the grains are just starting to brown, about 5 minutes. Stir in the salt and pepper, basil and the stock, or mushroom liquid - the stock will boil up almost immediately. Remove from heat, cover and let sit for about 10 minutes.

    Fluff with a fork, stir in the nuts and currants and serve.
