Recipe Introduction
Reconstitute the oyster mushrooms by covering with hot water ,stock or wine. Soak in a small bowl with a plate on top to keep the mushrooms under water. Strain the liquid through a coffee filter and use in soups or stews.
List of Ingredients
- 2 T butter
- 3 cloves garlic, minced
- 2 tsp flour
- 1 C milk or half and half
- 1/4 C madeira
- 1 bay leaf
- 1/4 C walnuts, chopped fine
- 1 package frozen spinach, chopped
- freshly ground nutmeg
- 1 C ricotta cheese
- pasta, cooked
- 1 package oyster mushrooms. (.35 ounce)
Instructions
- Prepare oyster mushrooms as above. Melt butter and saute garlic. Add flour and lightly brown. Add milk and Madeira slowly. Cook with bay leaf until smooth. Remove bay leaf. Add walnuts, spinach and mushrooms. When heated through, season to taste with nutmeg, salt and pepper. Tass pasta in ricotta. serve sauce over top.
