    Recipe Introduction


    Use leftover, cooked vegetables of your choice. My first try was carrots, broccoli, Cauliflower, green beans, peas and pearl onions. Scallions would also be good.

    List of Ingredients




    * 8 ounces elbow macaroni
    * 6 slices bacon
    * 1 tablespoon salted butter
    * 2 tablespoons flour
    * 2 cups milk
    * 1 1/2 C vegetables, cooked
    * 1/4 teaspoon salt
    * 1/8 teaspoon pepper
    * 1 cup New York sharp cheddar cheese, shredded
    * 1 cup shredded English Farm house cheese
    * 1 cup shredded Asiago cheese
    * 3 oz cream cheese


    Recipe





    1. Bring a large pot of lightly salted water to boiling.

    2. Cook pasta and vegetables of choice and cook according to package directions for pasta, in boiling water, then drain. Meanwhile, fry bacon over medium heat until crisp. Transfer to paper towels. Carefully pour off drippings, returning 2 tablespoons to pan. Add butter.

    3. Whisk in flour until smooth. In a thin stream, whisk in milk, salt and pepper. Cook over medium heat, and add cheese, and bacon, stirring until thickened.
