    Pasta, Peanut butter

    List of Ingredients

    4 heaping Tblsp chunky peanut butter (not Skippy-too sweet)
    2 beef bouillon cubes
    1 1/2 C water
    1/4 C desicated coconut flakes (unsweetened)
    2-3 tsp red pepper flakes (adjust to taste)
    1/2 tsp Chipotle sauce
    1/2 pound cubed beef
    2 C baby carrots

    Recipe

    Mix the peanut butter and bouillon in pan, over medium heat. Add water, then coconut, red pepper flakes and Chipotle sauce. Add cubed beef and cook until meat is hot. If not using the carrots, add frozen or leftover vegetables of choice, reheat. Serve over spaghetti or fettuccine noodles.

    Var, Any meat of your choice can be used, except fish. If the meat is uncooked, slice it thin and saute before adding to sauce.
    Any vegetable can be used such as peas, corn, succotash, etc...
    I have used sunflower seed in place of coconut, or finely chopped pumpkin seeds.
    Also have used Grated jalapeno in place of chipotle sauce.
