    1 1/2 cup whole wheat flour
    1 1/2 cup flour
    1/2 tsp. salt
    2 eggs
    1 cup water
    6 T oil
    1 T lecithin


    Recipe



    Mix salt with both flours and salt in a large bowl, then clear a well in the center.
    Whisk the liquid ingredients together in a small bowl, and pour into the well. Mix to form a ball of dough.
    Dump the dough onto a floured surface, and knead until smooth.
    Cover and let rise for 30 minutes.
    Rub flour onto your hands and the rolling pin. Roll the dough until it's an eighth-inch thick. It may be necessary to periodically sprinkle the dough with flour to keep it from sticking to rolling pin.
    Use a pasta machine or manually cut pasta into quarter-inch-wide noodles. Place cut noodles aside to harden.
    Drop noodles into a pot of boiling water and cook for 10 to 15 minutes.
