Serves 4.
List of Ingredients
2 C brains or 1 whole brain
3/4 tsp salt
2 T chopped green pepper
1 C thick white sauce

Remove membranes from the brains, and precook. Chop or force through meat grinder. Add salt, green pepper and white sauce. Form into small balls.
Roll pastry to 1/8 inch thickness. Place the balls on the pastry at equal distances apart. Place another sheet of pastry over. Stamp out around each ball with a round cutter, or cut them apart and press upper and lower crusts together. Bake in a very hot oven, (450 degrees F.) for 15 minutes, or brown in deep fat(375 degrees) before serving.
