    Preheat oven to 500 degrees.

    List of Ingredients




    2 C flour
    6 T shortening
    1/4 tsp salt
    4-5 T water
    6 large potatoes
    1/2 C cooking oil
    3 large onions
    salt
    pepper
    1 egg yolk

    Recipe



    Combine flour and salt. Cut in shortening with a pastry cutter. Stir in water with a fork. Form into a dough. Chill.
    Cook potatoes and mash. Cook onions in oil until very soft, (or caramelize). Mix with potatoes and season to taste.
    Roll out pastry to a large thin sheet about 2 feet square. Using half of the potato mixture, form a mound the length of the pastry to one half inch from edge. Bring edge of dough over potatoes and do the same with the other side until edges of dough meet. Cut off excess dough and seal. Repeat with second portion of potatoes and dough. Cut each roll into two and a half inch pieces and place on greased baking pans, Seam side down. Brush with beaten egg yolk. Bake 15 minutes to golden brown. May be frozen and reheated.

    You can also make small circles, fill with potatoes and seal, as for a turnover, for walking around snacks.
