Hashbrown Sausage Pie

List of Ingredients




10 brown and serve sausage link
1/3 C butter
12oz pkg hashbrowns, thawed
1/4 C onion
1/4 C chopped green pepper
1/4 tsp salt
4 eggs
1/4 C milk
1 C grated cheddar cheese
salt and pepper to taste
Parsley for garnish

Recipe



Brown sausage and set aside.
Melt butter in a 10 inch skillet. Combine potatoes, onion and bell pepper, Pat into skillet with spatula. Season to taste with salt and pepper to taste. Cook uncovered over low heat until underside is crispy brown, about 12-14 minutes.
Blend eggs, milk, and the 1/4 tsp salt and pour this over the potatoes.
Top with the cooked sausage arranged in spoke fashion. Cover and cook over low for about 8 minutes. Sprinkle cheese over top. Heat, covered, until cheese melts. Cut into wedges to serve. Garnish with parsley.
