Pie, Minced Salmon

List of Ingredients
1/2 pound canned salmon
1/2 C soft bread crumbs
1/4 C milk
2 eggs, separated
1 1/2 tsp lemon juice
3 T melted butter
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
1 1/2 tsp minced parsley
Short Biscuit Meat Pie Pastry
Recipe
Line a pie plate with the pastry. Remove the skin and bones from the salmon and mince the salmon fine. Combine with the bread crumbs scalded in the milk, the egg yolks, lightly beaten, lemon and juice, butter, seasonings and parsley.
Whip the egg whites stiff and fold in. Spread into the pastry crust. and bake at 375-400 degrees F. for 10minutes. Then reduce the heat slightly and bake to brown the crust and center of pie is firm to the touch. (about 30 minutes). Serve garnished with parsley, sliced lemon or broiled tomatoes.
Short Biscuit Meat Pie Pastry
3 C flour
5 tsp baking powder
3/4 tsp salt
3 T shortening
6 T butter, divided
1 C water
Sift dry ingredients together. Measure in 3 T of the shortening, and chop it into the flour with the back and edge of a spoon until large flakes are formed. Add the water, mixing it in quickly. Transfer to a slightly floured board and roll to one half inch thickness. Spread it with 2 T butter to within one half inch of the edges. Fold it over and press the edges together. Roll it again, spread with 2 more T of butter as previously. Repeat 1 more time. Use as the pie crust.
