Recipe Introduction
Preheat oven to 400 degrees F.- Serves 6-8.
List of Ingredients
3 C mashed potatoes
3 egg yolks
2 T butter
2 T minced onion
3/4 C sliced celery
salt to taste
pepper to taste
Worcestershire sauce to taste (1 tsp)(opt)
1 garlic clove, minced
3 C cooked lamb, cubed
3 C pan juices from lamb
1/2 C chopped parsleyRecipe
Heat butter in a large frying pan and add onion and celery. Soften the vegetables over medium heat and then add the garlic and meat. Drain fat from the cooked meat. Add Worcestershire sauce and beef stock and allow the liquids to reduce slightly.
Next, boil potatoes with salt for about 15 minutes, then mash with egg yolks, salt. Spoon the meat into a large baking dish and pour pan juices over the meat, add parsley, spreading evenly. Finally, spoon mashed potatoes over meat, spreading the potatoes evenly. Place the shepherd's pie into the oven and bake at 400 degrees Fahrenheit for about 20 minutes or until potatoes are browned and slightly crisp.
