Ginger, Wild, Candied and Ginger Syrup

2 C sliced wild ginger root
3 C water
2 C sugarRecipe
Scrape the ginger roots to remove skins. Cut ginger into one third inch, diagonal, slices. Boil it in the water for 1 hour, or until tender. Stir in the sugar and boil again for 20-25 minutes.
Bottle the syrup.
Place the candied roots on wax paper and dry overnight and into the afternoon. Sprinkle roots with coarse sugar and dry for one more day. Store in airtight container.
