Recipe Introduction
Iceland lichen, eryngo-leaved liverwort. edible lichen, consists of a fungus and an algae growing in close partnership.
List of Ingredients
3-4 inch lichen.
Lichen: bitter acids, soak in 2 changes of water with 1 tsp baking soda. drain, dry and crush or pound to a powder.
Boil with milk or water for a jelly like gruel. firms when cool, or add to soups or stews.
Mix half and half with wheat flour and use as flour.
