Maple seeds, edible, (but a lot of work on smaller ones).
Leaves edible, and can be used to wrap and flavor goat cheese. (possibly other cheeses, but I have not tried that yet.)
Sap (Acer saccharum). Also boiled down to consistency of brown sugar. Sap will sour in the sun.
Drill 2 inch deep hole, insert spout. When done close with a peg.
Boil sap to remove 35 parts water and strain. For sugar, boil to very soft ball stage and beat with an egg beater and dry in molds.
