Recipe Introduction

Dogberry, small fruited mountain ash, roundwood, missey-mossey, Cormier. Rowan in Europe.

List of Ingredients

Collect very ripe berries, they are mealy. (green are bitter). Ripens quickly, especially after a frost. Sour, best cooked as a jam, pie or wine, cider or perry.
Sauce, also mealy, add apple and ginger to perk up flavor, or cook with meat.
Pemmican.

Sitka mountain ash, excellent wine.
