    Recipe Introduction

    Over 30 species. Some thistles are poisonous: yellow thistle is actually a poppy (Mexico).

    List of Ingredients

    Thistle has a thin carrot like root, wash and peel the roots and roast or boil. (older roots in 2 changes of water to eliminate bitterness). Young roots can be lightly boiled, slice and fry as potatoes. or eaten raw.
    Stems, as a green. Soak over night to remove bitterness. Take care to peel them completely, because of tiny spines.
    Leaves, trim of prickles and boil in place of spinach, also raw.
    Flower, as an artichoke.
    Seeds (for your liver) use to make oil, or as a coffee substitute.
