Chicken and vegetable Simmer

List of Ingredients
2 chicken thighs
1/2 C canned napolitos,well rinsed
1 stalk celery
1 medium onion
1 baby zucchini
1 can baby corn
pinch lemon grass
pinch garam masala
1 clove garlic
salt, to taste
1 jar thai simmer sauce
Recipe
Debone and remove skin from chicken. Render the fat and skin in a fry pan. When rendered remove the skin from pan and discard. Reserve the fat.
Cut the chicen thighs into 1/2 inch strips lengthwise, then cut the stips in about 2 inch pieces, Cut the napolito strips into 1/2 inch pieces. Sliver the celery by slicing across the stalk at a 15 degree angle. Cut up the onion and zucchini sized to your preferance. Cut the corn in chunks and put the garlic through a garlic press, (or mince). saute the chicken pieces in the reserved chicken fat (1-2 tablespoons) until just tender firm. Add the vegetables and Spices and saute briefly. Add the thai simmer sauce and simmer 15 minutes. Serve on thai coconut rice, (or your preferance of rice or noodles)
