1 2-1/2 to 3-lb. fryer, cut-up
1 stick butter
1 can mushrooms
1/2C chopped onions
Dash each of parsley, paprika
2 tbsp. light cream
1 tbsp. Sherry
3 C cooked rice
Recipe
Brown chicken in margarine in skillet. Remove chicken; set aside. Drain mushrooms, reserving liquid. Brown onions and mushrooms in margarine in same skillet. Place chicken on heavy-duty foil; add next 3 ingredients. Add liquid from mushrooms. Add onions and mushrooms. Fold foil tightly around chicken. Place on baking sheet. Bake at 425 degrees for 1 hour. Serve with rice. Yield: 6 servings.
