Chinese Walnut Chicken and mushrooms

Serves 4
mushrooms you can use; Cinnamon cap, clam shell or cloud ear. Follow package directions for times. Dried mushrooms are more intensely flavored than fresh, but fresh will do if that's what you can get.
List of Ingredients
6 Chinese Dried Flower mushrooms (black mushrooms)
6 sliced scallion1/4 C peanut oil
2 chicken breasts, thinly sliced
1 T cornstarch
3 T soy sauce
1 tsp sugar
1 C chicken broth
1 large bell pepper,cut up
1 C chopped walnuts
Recipe
Soak mushrooms 20 minutes. Drain and slice. Saute onions in the oil, add chicken and mushrooms, fry until chicken just loses its pink color. Prepare sauce of the cornstarch, soy sauce, sugar and broth. Add it to the saute pan. mix in bell peppers and walnuts. Cook 5 minutes.
