8 thighs
8 drumsticks
1 qt brewed tea, double strength
2 T lemon juice
1 C sugar
1/2 C kosher salt
1 qt ice water
3 C flour
2 C corn flour
2 T Old Bay seasoning
1 T chili powder
1 tsp salt
1 tsp pepper
8 eggs
1 C buttermilk

Make a brine of the tea, lemon juice, sugar and salt. Simmer to dissolve sugar and salt. Add ice water. Cool completely. Add the chicken to this brine for 48 hours. Drain thoroughly.
Combine dry ingredients, except the flour.
Place 1 cup flour in a bowl, and the corn flour in another bowl. Beat eggs and buttermilk in another bowl. Line up the bowls, flour, buttermilk and then cornflour. Firmly coat the chicken in that order and chill for half an hour.
Fry in 3 inches of oil at 300 degrees F. for 15 minutes. Drain on rack. Chill at least 4 hours or more. Serve cold.
