1 broiler-fryer (2 1/2 pounds)
3 C water
1 T salt
2 tsp fine herbs
2 tsp onion salt
2 envelopes instant chicken broth
1/4 tsp pepper
1 C flour
Fat for frying

Cover chicken in salt water for 1 hour. (first 3 ingredients)
Combine rest of ingredients in a plastic bag. remove chicken pieces and shake in flour while wet until thickly coated. Reserving the water. Heat 1 inch of fat in skillet to 375 degrees F. and fry 5 minutes on each side. (10 minutes in all). Drain fat from skillet. Add the reserved chicken water with the giblets, 2 onion slices and a handful of celery tops (the leaves) and simmer for a half hour. (3 1/2 cups). Using 1 cup of the strained broth, add the chicken and cook 15 minutes. Remove chicken and keep warm.
Chicken gravy;
Use the remaining broth and add it to what is left in the pan. Make a paste of 4 tablespoons flour and 1/2 C water. Stir it into the boiling broth. Season to taste with salt and pepper. Add the chopped giblets. (makes 2 1/2 cups).
