    Linda's Tender Teriyaki Chicken

    List of Ingredients




    1 Grill pack of chicken, (Chicken Quarters, 4 legs and 2 breast quarters, or 1 1/2 chickens cut in quarters)
    1 1/2 C teriyaki sauce
    1/4 C cream sherry
    2 Tblsp brown sugar
    1 tsp minced, candied ginger
    4 scallions, sliced paper thin (white and green)

    Recipe



    Make a marinade of the above ingredients. Marinate the chicken for 1 1/2 hours, basting from time to time.
    Put in a single layer in large roasting pan and baste with sauce from basting container. Bake at 325 ,skin side up, for 1/2 hour with the lid on. Baste again, cook 1/2 hour. Turn the chicken skin side down and baste. Remove lid. Baste again in 15 minutes. Baste again after another 15 minutes and cook another 15 minutes. remove from oven and cool 5 minutes before serving. Check with a fork inserted in thickest part of thigh, if the juices run cear the chicken is done.
