Mushroom stuffed game hens

3 game hens
salt to taste
pepper to taste
juice of 1 lemon
1/2 C minced scallion
1/4 C butter
2 1/4 C sliced, sauteed mushrooms
dash nutmeg
3 T chopped parsley
1 T cornstarch
2 C grapefruit juiceRecipe
Season hens with salt, pepper and lemon juice. Saute onions in 2 tablespoons butter until tender. Mix with mushrooms, nutmeg and parsley.
Stuff mixture into hens, brush with butter. Roast at 425 degrees F. for 1 1/4 hours.
Make a gravy of the drippings in the pan, cornstarch and grapefruit juice.
