List of Ingredients
2-3 small hot red peppers
1 small loaf white bread
2 C evaporated milk
3 pound fryer, cut up
1 1/2 C olive oil
1 1/2 C cotija cheese (Sub Parmesan)
1 tomato chopped
2 C chicken broth
1+ tsp salt
2 onions, minced
1 garlic clove, mincedRecipe
Grind peppers. Soften bread in evaporated milk.
Brown chicken in the oil. Remove from pan. Saute onion and garlic in the oil.
Press bread through a sieve and add with tomato and pepper to oil. Add broth, salt and pepper. Bring to a boil. Add chicken and simmer on low for 1 hour. Sprinkle with cheese.
Garnish with slices of egg, a side dish of savory sweet potatoes and ripe olives.
