Rosemary-Orange Chicken Burgers

Makes 4 burgers
Serve these burgers with a simple vegetable salad on the side for a light but flavorful meal.
List of Ingredients
1 1/3 pounds ground dark chicken meat
1 teaspoon minced fresh rosemary
Zest of 1/2 orange (about 1 teaspoon)
1 small shallot, grated
1 clove garlic, grated
1/2 teaspoon kosher salt (divided)
1/2 teaspoon freshly ground black pepper
3 tablespoons light mayonnaise
1 tablespoon minced roasted red bell pepper (from a jar is fine)
4 whole-wheat buns, toasted
4 lettuce leaves
Recipe
Place oven rack 4 to 5 inches below broiler. Preheat broiler to high.
In a medium bowl combine the ground chicken, rosemary, orange zest, shallot, garlic, 1/4 teaspoon salt and the pepper. Using clean hands gently mix until well-combined. Form into 4 patties.
Place the patties on the rack of a broiler pan. Broil for 3 minutes. Turn the patties over and broil for another 2 1/2 to 3 minutes or until a meat thermometer reaches 165 degrees when placed in the center of a patty. Sprinkle the cooked patties with the remaining 1/4 teaspoon salt.
While the patties are broiling, combine the mayonnaise and red pepper in a small bowl.
When the burgers are done, spread the red pepper mayonnaise on the top half of each toasted bun. Place the chicken burgers on the bottom halves and top with lettuce leaves.
