The first time I made this it was awfully sweet so I reduced the sugar to half, still awfully sweet, I will revise this at a later date. Input would be greatly appreciated
List of Ingredients
8 pounds rhubarb
grated rind of 4 lemons
2 gallons water
6 pounds of sugar (original recipe)
Recipe
Chop the rhubarb into small pieces, unpeeled. Grate the lemon rind and add with the water to rhubarb in a crock. Cover with cheese cloth. Let stand 3 days. Strain and add the sugar and cover with muslin. Let stand 2 weeks covered with the lid of the crock. At the end of 1 month rack off and bottle.
