obtain fresh fruit. Clean and weigh it.
Add 50% of the weight in sugar to the fruit. Mix sugar in well. Cover and chill overnight. This will pull the natural juices out of the fruit.
Pour fruit, sugar and syrup into your airtight crock or jar. Cover everything with the rum to prevent spoilage.
Continue adding through the season or until your jar is full.
Wait about 6 months to taste it. This is good for cakes, dessert, (Especially Trifles), ice cream, etc….
This is similar to a Russian recipe using vodka. It's also similar to a recipe I used to make in the 70's using brandy and brown sugar and a lot of peaches and wild plums.
