    List of Ingredients




    1 pound ground pork

    Sauce;
    1 slice onion
    2 garlic cloves
    1/2 tsp fresh thyme
    1/2 tsp fennel seed
    1/2 tsp cumin seed
    1 tsp hot paprika
    pinch cinnamon
    1 tsp lime juice
    3/4 C meat stock
    small can green chilies, drained
    1 tomato, diced
    1 tsp arrowroot

    Recipe



    Brown the pork in large fry pan.
    In a blender, blend the first 5 ingredients down from the ground pork. (thyme through cumin), to a puree.
    In saucepan, heat these ingredients with the remaining ingredients, except arrowroot and pork, for 15-20 minutes.
    Add the arrowroot to a little cold water (as for cornstarch), and add to the saucepan, cook stirring until thickened to the consistency of a thin gravy. Pour this into the fry pan, over the pork and cook until thickened. remove from heat and cool.

    Make the burritos;
    Depending on what size burritos you are making, use either a teaspoon or two of the pork in sauce on a tortilla to an eighth of a cup. (or more).
    You can add your choice of beans, white navy beans worked well. Add cheese if desired. Fresh diced tomatoes also.
    If you plan to freeze these, leave sour cream out, as it loses its flavor when frozen. Reheat the burrito and top with sour cream.
