    Butler County Buckwheat Cakes

    List of Ingredients




    1/2 C fine bread crumbs
    2 C scalded milk
    1/2 tsp salt
    1 3/4 C buckwheat flour
    1/4 cake yeast
    1/2 C lukewarm water
    1 T molasses

    Recipe



    Pour milk over crumbs, set aside for 1/2 hour.
    Add salt, yeast dissolved in lukewarm water, and buckwheat flour to make a batter thin enough to pour. Let rise overnight.
    Stir well, add molasses and 1/4 tsp baking soda dissolved in 1/4 C warm water and cook same as for griddle cakes.
    Save enough batter to raise another mixing, instead of using yeast cake (1/2 cup).
