1 pound corned beef
2 large potatoes
1 large onions
3 T lard
5 eggs
Recipe
Cook and peel the potatoes, (or use leftovers). Chop the onions. Chop the corned beef into small pieces.
Saute the onion in the fat. Add the potatoes and meat. Mix well. Press ingredients into the pan and cook about 2 minutes. When browned, flip with a spatula and brown the other side. Stir all and add an egg, stir fast to coat the ingredients with the egg. Press into the skillet again and make 4 wells for eggs. Drop an egg in each and cover the skillet. Cook until whites are set and yolks are done to your preference.
