    Hops Yeast

    Harmony PA 1884
    Put on yo boil, 2 quarts water and 2 tablespoons hops.
    Pare and grate 6 large potatoes. When the hops and water are boiling, strain the liquid unto the potatoes and stir well. Place on the stove and boil up once. Add 1/2 C sugar and 1/4 C salt.

    Let the mixture get blood warm, then add 1 cupful of "risins" from a previous batch. (lacking that use 1 cake compressed yeast). Let rise in a warm place 5-6 hours. When well risen turn into a stone jug. Cork tightly and set in a cool place.

    Hops Yeast Bread
    use 2 quarts water for 3 loaves. Have the water almost scalding. Add 2 T lard or butter and stir in the flour.(as much as the liquid will take). Mix well and add 2/3 C hop yeast, careful that it is not too hot when yeast is added. Let rise and knead well. Let rise again and make into loaves. Bake 3/4 of an hour.
