    Tamale Pie

    List of Ingredients

    Tamale Dough;
    2/3 C lard
    2 tsp salt
    4 T fresh minced basil
    4 T fresh minced cilantro
    4 C masa
    2 C broth
    2 tsp baking powder

    Filling;
    1/2 C oil
    1 medium onion, chopped
    1 1/2 pounds chopped fresh meat
    1 clove garlic, minced
    1 C celery, small dice
    1 T salt
    1 tsp chili powder
    1 tsp dry mustard
    1 egg,beaten
    1 can shoepeg corn, drained (opt)
    1 15 oz can tomatoes
    1 15 oz can beans, rinsed and drained (optional)
    1/2 C sliced olives

    Recipe

    Tamale dough;
    Whip the lard until fluffy, slowly add rest of dough ingredients.
    Press the dough on bottom and up the sides of the pie tin. Add the filling. Add a top crust of the masa dough. Bake in the oven at 350 degrees F. 30-40 minutes.

    Grits dough;
    Boil 2 C hominy grits in 6 cups stock for 1/2 hour. You can also add chili powder if desired. (3/4 tsp)

    Filling;
    fry together the oil, onion, chopped meat, garlic and celery. Cool some and add rest of ingredients. Fill the masa shell.
