Texas Bowl of Red (chili con carne)

List of Ingredients
2 T fat
1 lrg onion, chopped
3 pounds beef,cubed
3 garlic cloves, pressed
1/4 C chili powder
1 T cumin
1 tsp oregano
2 tsp salt
1/2 tsp cayenne pepper
1 T paprika
5 C waterRecipe
Melt the fat in a heavy stock pot. Saute the onion until translucent. Add meat, garlic, chili powder and cumin. cook until the meat is browned. Add rest and stir. Simmer 2 hours.
Chili powder;
For mildness and flavor:
2 1/2 tablespoons ancho chile powder(dried Poblanos)
1 teaspoon Spanish paprika
or Dried New Mexico chiles
For heat:
1 tsp Dried Chiles de Arbol or Cayenne
1/2 teaspoon pasilla chile powder
1/2 teaspoon guajillo chile powder
For flavor:
1/4 tsp cumin powder
2 tablespoons garlic powder
1 teaspoons ground Mexican oregano, crumbled
Combine and save in a small jar to use as needed. The above ingredients are flexible, season to taste or experiment with other chilies as desired.
I left onion and garlic powder out because 1 usually add fresh to the dish being cooked.
