Chicken Rice Casserole

List of Ingredients
1/2 chicken breast, shredded (or 4 C turkey)
1/2 C chicken stock
1/4 C mole verde, (prepared)
1/8 C napolitos slices, rinsed, (or diced mushrooms)
3/4 C chopped onion, sauted
1/2 small can chopped green chilies
1/8 tsp green tabasco sauce
1/4 C grated Asadero cheese, (sub: monterey jack)
Combine above ingredients
1 stalk celery
14 1/2 Oz can diced tomatoes with green chilis
1 tsp chervil
1 tsp hot chili powder
salt, to taste
1 1/2 C chicken stock
1 C raw long grain brown rice
1/2 C grated pepper jack cheese
Recipe
Saute the celery, add tomatoes, stock and spices.
In large casserole dish, add the rice. then add the chicken ingredients on top of that. Pour the sauteed ingredients over that. Sprinkle with the grated cheese. Cover with foil and bake for 1 hour at 350 degrees F..Check rice, If the rice is too dry and not quite cooked enough (which happens, depending on the Brand of rice) add 1/2 C chicken stock and bake another 15 minutes.
Serve as is, or try stuffing it in bell peppers. As a burrito, use half rice casserole ingredients in a tortilla and 1/2 shredded chicken or turkey. Add cheese and sour cream if desired. Roll up and reheat.
