Peruvian-style garlic rice

- 1/4 C olive oil
- 2-3 cloves garlic, minced
- 3 C water
- 3/4 tsp salt
- 1 1/2 C long grain rice
Instructions
- Heat oil in saucepan, add garlic and cook, stirring until garlic is pale golden
- Add water and salt and bring to a boil on medium-high heat. Add rice, stir and return to a boil. reduce heat to medium-low and simmer, covered, for 20-25 minutes or until water is absorbed and rice is tender.
- Too serve, lightly oil a 1 cup measure or custard cup and pack rice into cup. Invert onto serving plate, tapping lightly to release rice.
