Red rice casserole

List of Ingredients
- 2 C cooked red Bhutenese rice
- 2 C shredded chicken
- 1/2 C chopped onion
- 1/2 C sliced celery
- 1/4 C chopped parsley
- 1/4 tsp thyme
- 2 C chicken stock 1/2 C chopped crimini mushrooms
- 1/2 C mixed vegetables
- 1/2 C Feta cheese
- sour cream
Instructions
- Combine all but the feta and sour cream. Crumble the cheese on top and put spoonfuls of sour cream here and there. Bake, covered, for 45 minutes at 350 degrees F. Remove foil and bake 5-10 minutes.
