    List of Ingredients


    • 1 C cooked roast beef
    • 3 C cooked Bhutinese red rice
    • 1/2 of a small can water chestnuts, cut in match sticks
    • 1/2 of a 15-oz can Straw mushrooms, roughly chopped
    • 1/2 of a 15-oz can bean sprouts
    • 6 baby corn, sliced
    • 2 C brown gravy, from the roast
    • 1 C shredded mozzarella cheese
    • 1 C ricotta cheese


    Instructions


    1. Combine all but the cheeses. Place half in a casserole dish, dot with half the ricotta and all of the mozzarella. Add another layer of rice mixture and dot with ricotta.
    2. Bake, covered, at 325 degrees F. for 45 minutes. Remove cover and bake 15 minutes.
