Roast beef rice

List of Ingredients
- 1 C cooked roast beef
- 3 C cooked Bhutinese red rice
- 1/2 of a small can water chestnuts, cut in match sticks
- 1/2 of a 15-oz can Straw mushrooms, roughly chopped
- 1/2 of a 15-oz can bean sprouts
- 6 baby corn, sliced
- 2 C brown gravy, from the roast
- 1 C shredded mozzarella cheese
- 1 C ricotta cheese
Instructions
- Combine all but the cheeses. Place half in a casserole dish, dot with half the ricotta and all of the mozzarella. Add another layer of rice mixture and dot with ricotta.
- Bake, covered, at 325 degrees F. for 45 minutes. Remove cover and bake 15 minutes.
