List of Ingredients
- 1/4 pound sausage
- 1 clove garlic, minced
- 3 T olive oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 large tomatoes, chopped
- 1 C raw brown rice
- 2 T chopped parsley
- 1 C stock
- Salt and pepper to taste
- pinch saffron
Instructions
- Heat oil in large skillet, crumble and brown the sausage and garlic.
- Add onion, bell pepper, and tomato and saute 3 minutes. Add the rice and parch until tan but not browned. Add parsley and stock. Season. Put it into a large casserole dish. Cover with foil and bake 35 minutes at 350 degrees F.
