    Spanish Rice Au Gratin

    List of Ingredients

    1 cup raw brown rice
    2 1/2 cups water, (see note)
    1/2 cup chopped onion
    1/3 cup, chopped bell pepper
    1/2 cup chopped celery
    4 ounce can chopped green chilis
    3 canned tomatoes, chop or dice (see note)
    1 1/2 cups shredded, cooked beef
    1 teaspoon salt
    2 teaspoons hot chili powder
    1 cup grated pecorino-romano cheese

    Recipe

    Combine all, except the cheese, in a large frying pan, bring to a boil. Cover with a lid and reduce heat to a slow simmer for about one hour. Sprinkle with the cheese. Cover with the lid. Shut off heat and do not disturb for five or ten minutes. Serves 6 as a main course.

    Note;
    Use some of the tomato liquid in place of some of the water.
