    Composed-Brussel sprout salad

    Serves 30

    List of Ingredients

    3 3/4 pounds Brussel sprouts
    1/4 C sherry wine vinegar
    3 T mayonnaise
    1 C olive oil
    9 large red apples
    1 1/2 C celery leaves
    3 3/4 C blue cheese
    3 C toasted walnuts

    Recipe

    Cur Brussel sprouts in quarters, stem up. Steam 12 minutes. Drain and cool.
    Mix vinegar and mayonnaise, Gradually whisk in oil. Season with salt and pepper and chill.
    Core apples and cut into 1/2 inch pieces, chop celery leaves and add to brussel sprouts. Top with dressing. Mix in crumbled cheese and coarsely chopped walnuts. Serve on radicchio leaves.
