    Chilled-Chicken and grains salad

    List of Ingredients

    1/3 C cooked quinoa
    1/3 C cooked brown rice (or wild rice)
    1/3 C cooked millet
    1/2 C canned garbanzo beans, drain and rinse
    1-2 handfuls slivered almonds
    1/4 C zante currants
    1/4 C sliced, sauteed mushrooms
    1 C cooked, diced or chopped poached chicken
    salt to taste
    pepper to taste
    1 tsp-1 T soy sauce
    1 dime size slice ginger, finely minced
    1/2 tsp orange zest
    1 scallion, thinly sliced

    Recipe

    Combine all and chill. You can add some diced red bell pepper if desired, or serve it in a chilled yellow bell pepper.
