Chilled, Gelatin Vegetable Salad

Makes 8 to 10 servings.
List of Ingredients
1 package (3 oz) Jell-O Lemon flavored Gelatin
1/2 tsp salt
1 C boiling water
3/4 C cold water
2 T vinegar
2 T grated onion
pepper to taste (optional)
3/4 C finely chopped cabbage or cauliflower
3/4 C chopped celery
1/4 C chopped bell pepper
1/2 C pimiento stuffed green olives, sliced
Recipe
Dissolve Gelatin and salt in boiling water. Add cold water, vinegar, onion and pepper. Chill until it begins to get thick. Then fold in vegetables. Pour into a mold. Chill until firm. Unmold.
Other Vegetable you can use instead of some of the above ingredients; (remembering that you want to end up with about a quart of finished product.
diced fresh tomato
1/2 cup each diced cucumber
about 3/4 cup grated carrots
2 tablespoons chopped parsley
thinly sliced radishes
thin sliced onion rings.
You can also use lime gelatin and add up to 1/2 C cottage cheese. (or cream cheese).
