    Chilled wild rice cranberry salad

    1 C wild rice and 2 C water, dash salt. Cook for 25 minutes until fluffy. Set aside to cool. Broil or saute 1-2 chicken breasts, dice and set aside to cool. Add 1 C dried cranberries and 1/2 cup of cashews. Mix with strawberry Sumac or maple vinaigrette dressing.
