    Simple-Crab Luncheon Salad

    List of Ingredients

    1 grapefruit, separated into segments
    1 large banana
    1 tomato, cut in 8 wedges
    1 small head lettuce
    1 (5oz) can crabmeat
    1 T mayonnaise
    salt and pepper to taste
    Paprika
    French Dressing

    Recipe

    Cut the banana in quarters lengthwise than in half crosswise to make eight pieces.
    Place one leaf of lettuce on each of two large salad plates as a bed for the salad. Cut the rest of the lettuce into bite size pieces and Place on the bed of lettuce leaving the center open to place the crab. Alternately arrange the grapefruit, banana and tomatoes on the lettuce.
    Mix the crab, mayonnaise and salt and pepper to taste and place a scoop of the crab in center of plate. Sprinkle with paprika. Garnish with watercress or parsley or scallion if desired.
    Variation; Slice cocumbers and hard-boiled eggs on lettuce with above ingredients. Or (my favorite) add a handfull of blueberries.
